The name pesto comes from the term pestle, meaning to pound or to crush. So, if you are feeling brave this summer, try making your next pesto using a mortar and pestle. The amplified aromas and flavors using this method will blow your mind! Pesto is one of those special recipes that is always better when it is made at home (store bought pesto has nothing on homemade). It's fairly easy and there are lots of spins you can put on it to make it your very own! Breaking the norms Although pesto is most commonly made from basil, it can be made with all sorts of leafy greens, such as carrot tops, arugula, swiss chard, radish leaves, beet greens, nasturtium leaves, or a mix of all. No matter the season, if you have fresh flavorful greens, you can make delicious homemade pesto. Pesto recipes usually call for pine nuts and although, the subtle rich flavors of pine nuts are hard to beat, don't be deterred if you don't have any on hand. You can use any kind of nut--almonds, walnuts, cashews, etc.--and each will bring their own flavor to your pesto. I like to add a half lemon squeezed into mine to add a bit of summer tang ;)
